Maker Spotlight: Chef Aline Faro, Farmer’s Table Express

39-year-old Aline Faro believes in the power of food. Not just food that comforts us or food that elevates us to new places; food that surprises us and expands our minds. Born in Rio de Janeiro, Brazil, she grew up spending a lot of time on her family’s farm. There, everything consumed was what we consider organic and natural today.

Aline attended FIU to study international business and fell in love with natural healing while in South Florida. She altered the course of her studies and graduated from the Art Institute of Fort Lauderdale with an emphasis in Culinary Arts. During that time, she specialized in raw, vegan, vegetarian and organic eating. While working as a private chef, she got her first culinary job as a line cook at Sublime, a vegetarian restaurant in Fort Lauderdale; she was quickly promoted to Pastry Chef.

Inspired by a visit to a local health food store, Aline went on to join the Juice & Java team and started the Green Drink Club, an instant hit among customers. She briefly moved on to work with The Green Gourmet, where she was introduced to Joseph Giannuzzi, then-owner of The Green Gourmet who would go on to open Farmer’s Table just a few years later.

In 2010, Aline returned to Juice & Java as Executive Chef and introduced a host of new items including soups, healing chef specials, a detox and cleanse. Her creations were a hit, and her emphasis on natural eating and living enhanced the community through wellness education.

Aline enrolled at the Institute of Integrative Nutrition and received Health Coach certification in 2012, allowing her to further her education and build new programs that focus on clean eating and living. It wasn’t until she suffered a panic attack in 2016 that she understood the importance of practicing what she preached. She reconnected with Joey and joined the Farmer’s Table team shortly after.

Today Aline is the Executive Chef for Farmer’s Table Express, a clean cuisine concept with an emphasis on plant-based, gluten-free, vegan and raw dishes. She keeps offerings fresh by connecting with the local community and learning their needs, staying up to date on food trends while educating and empowering them to make healthier choices.

“Farmer’s Table Express is about adding more plant-based, clean meals to a busy life. The complete meals require minimal preparation, provide nourishment and are insanely delicious,” explains Aline. “It’s time to inform people what they are putting in their bodies and giving them the proper knowledge to educate others in their community. This is real food made easier for people who need a little help.”

Aline currently lives in Coconut Creek with her husband, their son Luca, and their French Bulldog Blue. In her free time, she enjoys dancing anywhere there is upbeat music playing through the speakers.
